It’s tempting to buy a huge bottle and save some money but don’t do it. Go with Extra Virgin olive oil. Olive oil is a great oil for everything – salad dressing, marinades, cooking even dipping. On today’s show Dr Fitness and the Fat Guy opened with barefoot runner Matt Jenkins. Matt shared some great stories about running and the challenges of being a barefoot runner in an area that has lots of snakes. He realized that running helps you find balance in your life and that you are only competing with yourself not the other runners. He began running in the Marine Corps and has completed 95 marathons and 15 ultramarathons – most without shoes. Matt is the author of A Barefoot Run Across North Carolina. In today’s Wellness Minute Dr Fitness and the Fat Guy share their favorite red snapper recipe. Red snapper is one of the most delicious fish out there. And this easy recipe is a must add to your weekly meals. Take 4 nice sized red snapper fillets – about 4 oz each- and put it on some tin foil – this seals in the moisture so it doesn’t dry out.  You can add your favorite seasonings and herbs and a little olive oil. then throw some aromatic vegetables at the bottom of the pan – like carrots, celery, onions, etc. Bake in the oven for 10-15 minutes and enjoy.
