In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite edamame rice pilaf recipe. Whenever you are making rice (and we recommend brown rice instead of white rice) add some veggies to eat to make it a pilaf – kind of like rice-a-roni but healthier. So for this recipe add tomatoes, onions, chicken broth, a little olive oil, and a bag of frozen unshelled edamame beans. Edamame beans are high in fiber and deliver lots of protein.
