Start with a box of whole wheat penne pasta – then cook until it’s almost done – but not quite finished – this is more art than science. Now in a pan stir fry up some veggies like spinach, sun dried tomatoes, mushrooms, garlic, olives and pine nut. Now toss in the pasta and mix together for a little while longer.
