In today’s Wellness Minute Dr Fitness and the Fat Guy share their favorite vegetable soup recipe. I love vegetable soup – it is a great way to eat lots of vegetables and stay warm this winter. This recipe is a little crazier than the normal throw veggies in a pot and simmer. First gather up your veggies: carrots, squash, sweet potatoes, onions, etc. Roast them in the oven for awhile. Let them cool then throw them in your food processor and puree. Now throw all that into your chicken or vegetable broth to make a super healthy delicious soup that even your kids will eat.
