How about marinating your meat before grilling in order to grill a little safer this summer. Marinating meat cuts about 60% of the dangerous HCA which is produced when grilling at high temperatures. Use a red wine based marinade rather than one that has high fructose. Turn the meat often to prevent burning. And cook with the skin on the meat but remove it before you eat your meal.
