This vegetable omelette recipe is the Fat Guy’s new favorite breakfast. Whether you spell it omelet or the classier omelette – it tastes awesome. In some butter saute up some veggies you like – we use finely chopped red, yellow and orange peppers ( my kid loves to add bacon and cheese to this meal) – Crack 2-3 eggs per small pan and scramble them up in a bowl. When the veggies are done and you’ve removed any excess liquid then pour the eggs on top. Wait until the eggs solidify around the veggies while you gently move the whole mixture around. Now it is time for the flip – be careful this will make or break this – flip and let cook for a while longer – until all the eggs get done. Put it on the plate and fold it over.
