This curry salmon recipe is an easy fish meal for you curry fans. Cooking salmon is pretty easy and with this recipe you just season with curry powder. So here we go… Get about a pound of skinless salmon – try to buy wild but if you can’t find it go with farm raised. Get rid of all that brown stuff and just cook up the good salmon meat. Put the salmon on a baking sheet with a handful of cherry tomatoes. Season the salmon with some basil and curry powder. Preheat the oven to 400 and cook for about 12-15 minutes. Serve this with some brown rice.

It’s weird – Dr Fitness doesn’t eat shrimp and the Fat Guy hates curry yet Dr Fitness comes up with a curry shrimp recipe that neither one of us would eat. It’s a fast and easy recipe so if you’re in a hurry you may like it. You know that you can swap any other protein for the shrimp – but here goes – you need red curry paste, coconut milk, bell peppers, mushrooms and basil. Saute that stuff up then throw in your cooked shrimp (or any other protein). Serve over brown rice.

Jack like Thai? Well, Dr Fitness loves him some Thai vegetable curry. Here’s how he makes it – saute up some onions, garlic, carrots, peppers, and whatever vegetable you love into a pan that has some canola oil, vegetable stock, soy sauce and red Thai curry paste. Then make yourself some of those rice noodles that Lisa Lillien – the Hungry-Girl loves so much.. Now mix all of that together and serve. This is a low cal very filling meal.

In today’s Wellness Minute Dr Fitness and the Fat Guy share a delicious chicken with peanut curry recipe. This recipe uses the old shake and bake method of coating the chicken so it is a great way to involve your kids in the making of the meal.  Prepare about 3 pounds of chicken. In a plastic bag mix up some flour, curry powder, ginger, chili pepper, cilantro then toss the chicken in piece by piece. And shake it up until each piece is coated.
