Chain Reaction’s mission is to empower teens to learn through service. The program is teen-directed, teen-driven and teen-organized using volunteerism as its teaching tool. Since 2003, Chain Reaction has provided local teens ages 13 to 18 in Escambia and Santa Rosa counties with safe, meaningful and educational service activities.

In a safe, fun and empowering environment, our teens discover their innate strengths and untapped abilities; unite as a team of connected, committed citizens; and believe in themselves to achieve more and aspire to see the good in all things.

Here’s another great Roni Noone breakfast recipe. This spinach egg muffin recipe is from her GreenLiteBites book and blog. Pre-heat your oven to 375. Whisk up your eggs or egg whites with some baby spinach the pour into some muffin tins. Toss some bacon bits on top for added flavor. Bake for 10-12 minutes and serve hot.

I didn’t really think that making hard boiled eggs were that difficult but Dr Fitness seems to think he has a foolproof way to make them perfectly every time.  He says the key is not to overcook them. Here is his recipe. Cover your egg(s) in a pot with cold water. Make sure the water is about 1″-2″ inches higher than the eggs. Boil the water. Now turn off the heat, move the pot to another burner and cover the eggs. Wait 12 minutes. Now give those eggs a cold water bath. Some people like to take the shells off when the eggs are warm and some people like to wait until the eggs cool off. We don’t judge here.

How To Read Egg Labels

In today’s Wellness Minute Dr Fitness and the Fat Guy explain how to read egg labels. Since the FDA likes to put labels on all foods, eggs have not escaped their scrutiny. So now all you have to figure out is what all these new labels mean. Omega 3 Fortified means the hens were fed omega 3s in their feed, which therefore make their eggs omega fortified. When an egg is said to come from free range or cage free hen that means the hens have a less stressful, healthier lifestyle which in turns makes a healthier egg – an egg with similar attributes of an egg from the good old days when chickens and horses ran free.  Listen right now to hear Dr Fitness’ tips.
