In today’s Wellness Minute Dr Fitness and the Fat Guy share their recipe on how to make a tortilla pizza. Making pizza on a tortilla is a quick and easy way to get your pizza fix with a lot less calories. This recipe is for a Mexican style pizza but you can customize with just your favorite ingredients as well. The ingredients for the Mexican Pizza include ground beef topping with Mexican seasonings (make these toppings first and set aside). I make the pizza in the toaster oven but you can make it in a big oven if you are making several of these thin crust pizzas. Brush a little olive oil on the top of a flour tortilla then bake in the oven for a couple of minutes to firm it up a bit. Then take it out and put on your sauce, toppings and cheese. Start out with fresh asparagus – about a pound or a pound and a half. Throw some olive oil in a pan with some garlic , lemon and your favorite spices then toss in the asparagus and stir fry until their done. Don’t cook them until their mushy – you want them to be crunchy – so your kids will eat them. First slice up that eggplant into pretty thick slices. Brush with olive oil and seasonings and toss on the hot grill for about 7 minutes a side or until done. When it’s done top that bad boy with some mozzarella cheese, basil, onions and whatever else sounds good to you. In today’s Wellness Minute Dr Fitness and the Fat Guy share their seared tuna recipe. Dr Fitness loves his seared tuna- he orders this out at restaurants whenever he can. The key to making this is to make sure you buy fresh high quality tuna. First make the sauce by combining mustard, white wine, soy sauce and honey. Now heat up a skillet to sear the tuna – put the tuna in the skillet for just a couple of minutes on each side. A nice touch is to throw some sesame seeds int he skillet .
