In today’s Wellness Minute Dr Fitness and the Fat Guy share their low cal avocado mayo recipe. Mayonnaise is a delicious must have condiment for some people (and repulsive to the Fat Guy).  So Dr Fitness decided to try and create a healthier mayo. Mix butter milk with olive oil, some hot chili oil, avocado and lime – blend thoroughly. This concoction has about 25 calories instead of the 100 calories normal mayo has and this stuff has a bit of kick as a bonus.   Listen right now to hear Dr Fitness’ tips. In today’s Wellness Minute Dr Fitness and the Fat Guy share an interesting grilled avocado and chicken recipe. A grilled avocado goes great with a honey glazed chicken. So here we go – make a marinate for the chicken with lemon juice, soy sauce, garlic and marinate for 45 minutes.  Toss on the grill –  when the chicken is about halfway done toss a peeled avocado half on the grill next to the chicken. As the chicken is about ready to be taken off the grill – brush some honey glaze on the chicken and take the avocado off the grill as well. Enjoy.  Listen right now to hear Dr Fitness’ tips. In today’s Wellness Minute Dr Fitness and the Fat Guy share a delicious chicken with peanut curry recipe. This recipe uses the old shake and bake method of coating the chicken so it is a great way to involve your kids in the making of the meal.  Prepare about 3 pounds of chicken. In a plastic bag mix up some flour, curry powder, ginger, chili pepper, cilantro then toss the chicken in piece by piece. And shake it up until each piece is coated. After you have cooked the chicken add some peanut butter to give the chicken a peanuty flavor. Listen right now to hear Dr Fitness’ tips. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite penne pasta recipe. Start with a box of whole wheat penne pasta – then cook until it’s almost done – but not quite finished – this is more art than science. Now in a pan stir fry up some veggies like spinach, sun dried tomatoes, mushrooms, garlic, olives and pine nut. Now toss in the pasta and mix together for a little while longer. Remember use more spinach than you think you should because it virtually disappears when you cook it. Listen right now to hear Dr Fitness’ tips.
