Vacation Travel Healthy Eating Tips

If you are going to be driving all day – it is a good idea to get some exercise in beforehand – because once you’re in that car you won’t be burning many calories.  Prepare lots of healthy snacks to eat in the car in order to prevent trips through the drive through or be tempted by all the unhealthy food choices there are on the road. Healthy snacks like sandwiches, wraps and veggies and fruit you can eat with your hands without making a mess work great. If you’re traveling by plane be sure to bring some trail mix or energy bar that you can keep on you in case there is a flight delay. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite macaroni salad recipe. First up cook and cool a bunch of elbow macaroni. Put those aside – and try not to eat too many of them yet. Saute some green pepper, red pepper, in garlic and olive oil;. Go nuts with the veggies – add whatever you like. On today’s show Dr Fitness and the Fat Guy had on our good friend Nicci Micco, Deputy Editor of Eating Well magazine. This month’s magazine features the tomato on the cover.  Nicci shared some healthy skin tips from the magazine. She said that the food you eat can influence how your skin looks and feels. She said to eat more salmon, strawberries, tomatoes and edamame and drink more coffee for healthier skin.  There is also a great article on making your own homemade pickles in the magazine as well – along with lots of healthy recipes. Nicci also gave us a preview of the magazine’s new book titled Eating Well on a Budget – this cookbook features meals that can be made for less than $3 a serving. Her last book had lots of great 500 calorie meals and that can still be found in bookstores and at the magazines website. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite tofu broccoli stir fry recipe. Start with about a pound of extra firm tofu – chop that up real good. Then take some vegetable broth, soy sauce, sugar, red pepper, olive oil, ginger and garlic mix it up then dump all that in your wok (or pan). In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite salmon asparagus recipe. Take four salmon fillets each about 4-6 ozs. Get rid of the skin and all that brown stuff. Does anyone like that brown stuff?  Add asparagus, dry white wine, vegetable broth, spices and throw the whole thing in the oven for about 12-1 minutes. On today’s show Dr Fitness and the Fat Guy had on Catherine Cassidy, Editor-in-Chief of the Taste of Home media group. We opened the segment talking about how the Gulf oil tragedy is going to impact fish consumption and probably make fish and shrimp more expensive. She also talked about the trend to eat fresh and eat local at farmer’s markets. Catherine shared some tips on how to cut calories from your favorite comfort food recipes. She said an easy way to cut calories is to boost up the vegetables in your meal while cutting back on the meat. She also said that you can mix and match some low calorie milk or cheese in a recipe and not really notice. But most importantly you have to learn what a portion size really is – and it’s much smaller than you think it is.  She also explained that Taste of Home magazine and cookbooks feature reader submitted recipes that have been throughly tested in the Taste of Home kitchen. She also said that the recipes are so easy a husband can do it. Catherine also gave some great tips on how feed a large group – she said that assembly line serving works best -with foods like fajitas or tacos. This is a great place to get ideas for those seasonal and holiday recipes for sides and desserts as well. In recent research that will not surprise anyone who has a child it seems that kids prefer foods that are associated with their favorite cartoon characters. On the surface this may seem like bad news – but in reality parents can take this information and use it to their advantage. How about filling bags with fruit slices and vegetables and slapping cartoon stickers all over it and then give that to your kids to make it more appealing. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite green bean recipe.  With local farmers markets opening everywhere around the country – it is a great time to try new ways to add fresh vegetables to your healthy eating diet. Also experiment and try different vegetables and ask the farmer how he/she makes the vegetables. For this recipe steam 4 cups fresh green beans. For the sauce mix sherry, olive oil, fresh garlic and limes. We used to call green beans green french fries to get our kid to eat them. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite fruit smoothie recipe. The secret to making a super thick fruit filled smoothie is to use frozen fruit instead of ice. You can use the ice as filler to make a larger quantity but try and use frozen fruit in your smoothie as the base. If you want to give your smoothie an ice cream taste then add some milk and vanilla extract. And if you’re really living on the edge add some cashews into the blender – go nuts for added protein.
