In today’s Wellness Minute Dr Fitness and the Fat Guy share their favorite mustard crusted salmon recipe straight from the pages of Eating Well magazine. Use about a pound and half of center cut salmon fillet. Season with a paste like rub of stone ground mustard, lemon, sour cream and some spices. Toss in the broiler for 10-12 minutes. For the glaze mix together brown sugar, soy sauce and garlic. Pour over the salmon and bake in the oven. Healthy eating can be this simple to make.  Spring for fresh salmon rather than frozen. The Fat Guy is always cutting up fresh pineapple for his family to eat while watching TV at night. This recipe calls for about a cup of chopped  pineapple as the base. Then add your usual suspects, cilantro, lime, onion, tomato, gree pepper and even black beans. Dr Fitness puts this salsa on lettuce but you know the Fat Guy loves his chips. In today’s Wellness Minute Dr Fitness and the Fat Guy share Dr Fitness’ favorite tuna salad recipe. This recipe doesn’t use mayo. Start with either your choice of cans or pouches of tuna. Experiment – see which one you like more. Add celery, walnuts, onions, tomatoes, and your favorite spices.
