Charoset is a delicious mixture of apples, nuts, red wine and honey. It is used at the Seder table to symbolize the mortar from the bricks the Jewish slaves had to make. It is everyone’s favorite food from the seder then no one makes it again until next Passover. So here is the recipe – make it year round because it is healthy and delicious. You need some gala apples, walnuts, raisins, orange juice, red wine,  honey and cinnamon. Chop up everything then mix it all together. Serve it over matzoh or any other cracker. It makes for an interesting appetizer you can put out at parties that people can snack on before the meal.

Quinoa instead of Queen – a bit of stretch for a pun but I went for it. All this Kate Middleton and Prince William news coverage is brainwashing me. Back to the recipe. You all know how much we love quinoa – so here is another recipe that lets you use it. Chop up about 1 pound of sweet potatoes, throw them in a pan with button mushrooms, garlic spinach wines, olive oil and your favorite spices. Separately boil up some quinoa and set it aside. When everything is done serve the veggies over the quinoa for an awesomely healthy meal fit for a queen.

This curry salmon recipe is an easy fish meal for you curry fans. Cooking salmon is pretty easy and with this recipe you just season with curry powder. So here we go… Get about a pound of skinless salmon – try to buy wild but if you can’t find it go with farm raised. Get rid of all that brown stuff and just cook up the good salmon meat. Put the salmon on a baking sheet with a handful of cherry tomatoes. Season the salmon with some basil and curry powder. Preheat the oven to 400 and cook for about 12-15 minutes. Serve this with some brown rice.

Here is a twist on the classic pasta and meatballs recipe. Dr Fitness found these veggie meatballs from Veggie Patch that he says you have to try. Make your marinara sauce like you usually do – Dr Fitness likes to add some freshly chopped tomatoes to his gravy. Cook up your meatballs then toss them into the sauce and let that cook some more. Make whatever pasta you like – we like the Barilla Plus

Preparing this tilapia piccata recipe is pretty easy – for lovers of the piccata you can easily modify this for chicken. Get one saute pan ready with olive oil, cooking wine, lemon juice, capers, spices and lots of baby spinach (which you will add last because it magically shrinks to about 1/10 of the original heap of spinach you start with). Now take 4 six ounce tilapia fillets and dip them in a bath of flour then toss them into your heated saute pan that contains everything but the spinach. Cook for a couple of minutes on each side then add the spinach. Serve over whole wheat pasta or brown rice.

Using lettuce as the wrap that holds your food is a great way to save lots of calories. For this recipe throw cut up chicken breasts in a pan with canola oil, garlic, soy sauce, cashews, water chestnuts, ginger and some scallions. When everything is done spoon that yummy goodness into some bibb lettuce leaves and eat up.

How do you like your smoothie’s creamy or fruity? Get some mango – fresh or frozen. The good thing about using frozen fruit is that you don’t have to use ice cubes to make it a smoothie which dilutes the fruity goodness. If you like it creamy then add some milk product either soy, almond or low fat cow milk. You can add some yogurt if that floats your boat and some honey to sweeten it if you really have to. Some people throw in some protein powder or whey to give it a little power. Dr Fitness like to throw in a handful of berries to make it a little more colorful. So celebrate the start of smoothie season with a nice cold frozen treat like this one. The key to a good smoothie is your blender – the Fat Guy bought a VitaMix at Costco and it works like a charm.

Dr Fitness loves him some tofu. He eats it all the time. At his house and at restaurants. He likes extra firm. This recipe is to take a 14 oz package of extra firm tofu slice it up. In a pan saute some3 bok choy, garlic, vegetable broth, ginger, brown sugar in some sesame oil. You mix in the tofu into that hot mess. cook it some more then serve it over rice or noodles.

There are not enough meals where the lettuce is the wrap. Lettuce makes a great wrap for a couple reasons, – one it has no calories and two you can find leaves of lettuce to hold just about anything. Go with romaine lettuce. Saute up some ground turkey meat or your favorite ground protein in sesame oil. Add in some garlic, ginger, chicken broth, spices and hoisin sauce. Throw that on your lettuce and wrap it up.
