When I say new – I mean to Americans – South Americans have been eating quinoa for ages.  Quinoa wqas once known as the gold of the Incas. Whip up a batch of quinoa then throw in tumeric, garbanzo beans, paprika, cumin and the quinoa in water then simmer slowly for about half an hour. This goes great with grilled zuchini. In today’s Wellness Minute Dr Fitness and the Fat Guy share their new grilled eggplant recipe. This recipe can also be modified as a great sandwich as well. First slice up that eggplant into pretty thick slices. Brush with olive oil and seasonings and toss on the hot grill for about 7 minutes a side or until done. When it’s done top that bad boy with some mozzarella cheese, basil, onions and whatever else sounds good to you. Sprinkle with capers and basil leaves then drizzle balsamic vinegar, sugar, cinnamon, slat and olive oil dressing over them. And add some mozzarella cheese to class it up a bit. In today’s Wellness Minute Dr Fitness and the Fat Guy share their low cal avocado mayo recipe. Mayonnaise is a delicious must have condiment for some people (and repulsive to the Fat Guy).  So Dr Fitness decided to try and create a healthier mayo. Mix butter milk with olive oil, some hot chili oil, avocado and lime – blend thoroughly. In today’s Wellness Minute Dr Fitness and the Fat Guy share an interesting grilled avocado and chicken recipe. A grilled avocado goes great with a honey glazed chicken. So here we go – make a marinate for the chicken with lemon juice, soy sauce, garlic and marinate for 45 minutes.  Toss on the grill –  when the chicken is about halfway done toss a peeled avocado half on the grill next to the chicken. In today’s Wellness Minute Dr Fitness and the Fat Guy share a delicious chicken with peanut curry recipe. This recipe uses the old shake and bake method of coating the chicken so it is a great way to involve your kids in the making of the meal.  Prepare about 3 pounds of chicken. In a plastic bag mix up some flour, curry powder, ginger, chili pepper, cilantro then toss the chicken in piece by piece. And shake it up until each piece is coated. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite quinoa salad recipe. Quinoa is a grain (kind of like couscous) that the Inca’s from Peru and the Andes Mountain region used to love. It is a very good protein for a grain. Sometimes it is hard to find in traditional grocery stores but you can usually get it in Whole Foods – I’ve seen it at Costco. To make this salad you cook up a cup then add your favorite chopped up vegetables like, onions, cucumbers, basil. toss in some pine nuts for a crunch. then you can make a healthy dressing from extra virgin olive oil, balsamic vinegar, garlic and lemon. mix together and eat up.  Listen right now to hear Dr Fitness’ tips.
