In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite panini sandwich recipe. Everyone loves a good sandwich – a panini is a hot toasted sandwich pressed flat. You really need a panini grill to do this right, but you George Foreman grill fans should be able to pull this off. Take 2 slices of fresh italian bread then pile up some mozzarella cheese, tomatoes, your favorite vegetables, some balsamic vinegar, some extra virgin olive oil if you want and toss in some meat if you want. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite spinach orzo pasta recipe. Orzo is a kind of pasta that looks like a big single piece of rice. I like the whole wheat orzo the best.  It kind of reminds me of the roni in rice-a-roni. Boil  the orzo until almost done then pull it out of the water and put in a colander to cool. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite edamame rice pilaf recipe. Whenever you are making rice (and we recommend brown rice instead of white rice) add some veggies to eat to make it a pilaf – kind of like rice-a-roni but healthier. So for this recipe add tomatoes, onions, chicken broth, a little olive oil, and a bag of frozen unshelled edamame beans. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite pasta and arugula salad recipe. This is a great recipe for a meal when it is hot outside. The key to cooking pasta is to pull it out of the boiling water before it is fully cooked and let it finish cooking in the colander in the sink. Now make a salad with arugula lettuce, tomatoes, peppers, and all you favorite salad vegetables. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite salmon asparagus recipe. Take four salmon fillets each about 4-6 ozs. Get rid of the skin and all that brown stuff. Does anyone like that brown stuff?  Add asparagus, dry white wine, vegetable broth, spices and throw the whole thing in the oven for about 12-1 minutes. For the sauce mix sherry, olive oil, fresh garlic and limes. We used to call green beans green french fries to get our kid to eat them. You can use the ice as filler to make a larger quantity but try and use frozen fruit in your smoothie as the base. If you want to give your smoothie an ice cream taste then add some milk and vanilla extract. And if you’re really living on the edge add some cashews into the blender – go nuts for added protein.
