Here’s another of  Roni Noone‘s awesome recipes. Her spicy tomato soup with pinto beans recipe from her GreenLiteBites book and blog is delicious. She calls this soup spiced but we called it spicy because our spices are a little hotter than hers. Feel free to spice this recipe to your taste. Grab some condensed tomato soup – low sodium, some water, some of your favorite spices like chili powder, cilantro, cumin. Throw in some real tomatoes and your favorite beans – we go for pinto beans here. Turn that pot on and cook up some dinner.

In today’s Wellness Minute Dr Fitness and the Fat Guy share their favorite noodle soup recipe. Even though I’m not a big noodle guy i do really love Asian noodle soups. This recipe is pretty simple you can always add the veggies you like to customize it. And soup is great year round but it is especially satisfying when it is cold outside.  Start with 5 cups low sodium broth (chicken or vegetable). Add in some lemon grass, ginger, mushrooms, scallions, bean sprouts and some hot chili oil.  Use about 4 ounces of dry rice noodles as well. In today’s Wellness Minute Dr Fitness and the Fat Guy share their favorite carrot parsnip soup recipe.Parsnips are a great addition to soup. This recipe is so good Bugs Bunny would eat it. Stir fry in olive oil some cut up onions, carrots, parsnip, and other veggies you like. Then toss all that in a  food processor with some vegetable broth and some seasoning like black peppers and chives. In today’s Wellness Minute Dr Fitness and the Fat Guy share their favorite vegetable soup recipe. I love vegetable soup – it is a great way to eat lots of vegetables and stay warm this winter. This recipe is a little crazier than the normal throw veggies in a pot and simmer. First gather up your veggies: carrots, squash, sweet potatoes, onions, etc. Roast them in the oven for awhile. Let them cool then throw them in your food processor and puree. Now throw all that into your chicken or vegetable broth to make a super healthy delicious soup that even your kids will eat.
