Everyone loves spinach – from Popeye to Dr Fitness. No one debates how healthy it is but some people aren’t crazy about the taste. Here is a salad recipe that even the most picky spinach eater will eat. In a big bowl throw in baby spinach, with chopped avocado, and red bell peppers. Olives work well here if you like them along with onions. If you feel adventurous make some homemade croutons by baking some bread and crumbling it in the salad. Use a nice vinegarette dressing and you are good to go.

In today’s Wellness Minute Dr Fitness and the Fat Guy share their spinach salad recipe. Baby spinach is one of my favorite ingredients for a salad. First make a low fat dressing using olive oil, orange juice, vinegar, horse radish, dijon mustard, honey. Now steam some green beans and chill them. Make the salad with the spinach, chilled green beans, your favorite salad ingredients and to be exotic add some fruit like orange slices or grapes.  It taste just like lettuce but is crammed with a bunch more nutrients.  Listen right now to hear Dr Fitness’ tips. In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite spinach orzo pasta recipe. Orzo is a kind of pasta that looks like a big single piece of rice. I like the whole wheat orzo the best.  It kind of reminds me of the roni in rice-a-roni. Boil  the orzo until almost done then pull it out of the water and put in a colander to cool. The dressing is a balsamic vinegar and olive oil combo. Now add some spinach, olives, onions. Lose the cheese to save some calories. Listen right now to hear Dr Fitness’ tips.
