
Here’s another of Roni Noone‘s awesome recipes. Her spicy tomato soup with pinto beans recipe from her GreenLiteBites book and blog is delicious. She calls this soup spiced but we called it spicy because our spices are a little hotter than hers. Feel free to spice this recipe to your taste. Grab some condensed tomato soup – low sodium, some water, some of your favorite spices like chili powder, cilantro, cumin. Throw in some real tomatoes and your favorite beans – we go for pinto beans here. Turn that pot on and cook up some dinner.




nth’s magazine features the tomato on the cover. Nicci shared some healthy skin tips from the magazine. She said that the food you eat can influence how your skin looks and feels. She said to eat more salmon, strawberries, tomatoes and edamame and drink more coffee for healthier skin. Nicci also gave us a preview of the magazine’s new book titled Eating Well on a Budget – this cookbook features meals that can be made for less than $3 a serving.
