In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite quinoa salad recipe. Quinoa is a grain (kind of like couscous) that the Inca’s from Peru and the Andes Mountain region used to love. It is a very good protein for a grain. Sometimes it is hard to find in traditional grocery stores but you can usually get it in Whole Foods – I’ve seen it at Costco. To make this salad you cook up a cup then add your favorite chopped up vegetables like, onions, cucumbers, basil. toss in some pine nuts for a crunch. then you can make a healthy dressing from extra virgin olive oil, balsamic vinegar, garlic and lemon. mix together and eat up.  Listen right now to hear Dr Fitness’ tips. Choose your fish – grouper, snapper even salmon.
