In today’s Wellness Minute Dr Fitness and the Fat Guy share Dr Fitness’ favorite shrimp and avocado salad recipe. Even though Dr Fitness wouldn’t be caught dead eating shrimp he found this recipe for you. Defrost about a pound of medium frozen shrimp. Don’t forget to de-vein them. Add tomatoes, scallions, assorted veggies and romaine lettuce and a fresh bright green peeled avocado. Then mix in a balsamic vinegar and garlic.
