Substituting fish for ground beef to your tacos is an easy way to make tacos a healthier meal. We recommend using tilapia. For this recipe take about 6 6oz tilapia fillets and spice them up with your favorite Mexican style spices. Now toss them on a hot grill for a few minutes on each side. Fill the soft flour tortilla with some lettuce, cucumber, radishes and lime juice – sour cream is optional.

A southerner at heart, Rebecca Palmer grew up in New England. Living in Massachusetts, Vermont and New Hampshire, she attended Keene State College and earned a degree in Communications and Business. Upon graduation, she felt warmer weather calling her, and moved to Atlanta in 2000. She initially took a position with Piedmont Hospital. After a couple other endeavors, Rebecca decided that her heart was in working with the elderly, and she took the position of Marketing Director for Northlake Gardens, an assisted living and memory care community with about 60 apartments.
Jeannine Blackman first worked in healthcare as a high school student. As a member of the Medical Careers Club, she was able to get a paid position at the In-Patient Pharmacy of a local hospital in Detroit, where she was born and raised. At the age of 19, Jeannine took a position as a restaurant general manager, and spent the next 26 years in the restaurant and hospitality business. After moving to Atlanta in 1999, Jeannine was working in the hospitality industry when her company was bought out. She decided to go back to school at that point, becoming licensed as a licensed practical nurse (LPN). Today Jeannine is the Resident Services Director at Northlake Gardens, where she is responsible for all aspects of resident care. A third yankee in the studio today, Dawn Coons was born and raised in Buffalo, New York. Her love for seniors resulted from being raised by her grandparents. In Dawn’s words, her grandmother was her best friend. Having moved to Atlanta in the mid 1980s, Daw moved her grandmother to Atlanta to live with her in 1986. At the time, Dawn had been pursuing a nursing degree. In order to better care for her grandmother, she decided to work in real estate due to the flexibility in that career. When the real estate market turned, Dawn began working with seniors again for a senior residential placement service. During her tenure with this company, she got to know the Benton House. When they decided to build the new community in Johns Creek, Dawn knew that she wanted to be a part of that organization. Today, Dawn is the Community Relations Director at the Benton House Johns Creek, a new assisted living and memory care community located at 5050 Kimball Bridge Road in Johns Creek. Dodging one tornado after another, Dr Fitness used his super speed to escape Alabama and keep his family safe in Georgia. Also Chris Cason, author of the book A Guide to Tea and the sommelier from Tavalon Tea shared some great recipes and tips on making iced tea, sangria with tea and other healthy beverages. Researchers recently asked a bunch of fitness pro’s from around the world to name the best exercise. The Fat Guy said sex. Dr Fitness guessed swimming. But we were both wrong.
Burpees or squat thrusts got an unusually large amount of votes because that exercise engages a lot of muscle groups. Squats got some votes as did interval training. But the exercise on most people’s list was….wait for it…brisk walking for 30 minutes a day 5 days a week.
The thought behind brisk walking as the best exercise was that it was easy to do, you don’t need any expensive equipment, people who walked were able to stay compliant over long periods of time, the injury risk was minimal and if you regularly walked at a brisk enough pace you can attain your fitness and weight loss goals. So go for a walk today to celebrate this discovery. What is your favorite exercise?
Your kitchen has got more bacteria running around than your bathroom does. Well, maybe not your kitchen, the Fat Guy’s kitchen for sure. To prevent picking up one of those dangerous food germs and to keep your kitchen clean and safe then take the following precautions
Wash your hands frequently when you are in the kitchen preparing food or cooking.
Have separate chopping boards for meat and veggies
Always cook your meat thoroughly
Wash your utensils very well – especially when dealing with cutting raw meat
Let me state clearly up front, I am no Tom Brokaw. His book The Greatest Generation is a powerfully written book. The stories and reflections captured me completely when I read the book. Brokaw’s concept has motivated me to want to capture stories from veterans of the Viet Nam War. I’ve begun the process by asking my friends who are Viet Nam veterans to share their stories with me. I’ll be in my hometown of Greenville, PA in the coming week and have put out the word that I’d like to collect stories from my classmates who served in Viet Nam and any other veterans from that war. I’ve asked them to meet for a couple hours one afternoon to talk and share. I want to hear their stories: the ones of battle, life in base camp, what went on during R&R (that is shareable), memories of friends. Are you a Viet Nam veteran? Do you know some Viet Nam veterans?
