Here’s another great Roni Noone breakfast recipe. This spinach egg muffin recipe is from her GreenLiteBites book and blog. Pre-heat your oven to 375. Whisk up your eggs or egg whites with some baby spinach the pour into some muffin tins. Toss some bacon bits on top for added flavor. Bake for 10-12 minutes and serve hot.

Being an author, especially if the subject matter of the book presents insights into one’s profession, strengthens the person’s reputation as an authority in that field. That carries impact! Even being part of a collaborative effort among several writers carries professional clout for each author. Charles H. Green is former president of Sunrise Bank, one of the leading SBA lending banks in the United States. He currently is a consultant for small businesses, international businesses operating in the United States and non-profits. Charles wrote The SBA Loanbook: the Complete Guide to Getting Financial Help Through the Small Business Administration. The book is now in its third edition. Jim Hogan collaborated in the writing of Improv to Improve Your Business: Using the Principles of Improvisation to Foster Communication, Creativity & Innovation. One outcome for Jim in having been a part of that collaborative writing adventure was a chance at a new career. Charles Green and Jim Hogan share their unique perspectives on and experience with the “power of the pen” on one’s business and career.
Linda Del Bosque is a Dallas native and the youngest of five kids. From an early age her parents instilled the value of hard work, integrity and values in all of their children. Her experience in helping seniors began as a child as her family spent many hours volunteering at nursing homes. After a couple of years of community college, Linda moved to Chicago to attend design school where she studied interior design. After returning to Dallas, Linda recognized a need for a publication that helped communicate valuable information to senior citizens. She began a newsletter that soon evolved into “Mature Texan Magazine”. Today, her publications reach seniors in Dallas and Tarrant Counties and will soon be expanding to the Houston area. As a non-profit organization they have given back over $100,000 to the communities that they serve and sponsor multiple events for seniors. Since all movement burns calories – it goes to reason that fidgeting can help you stay fit. But you better be doing a lot of it every day. This kind of incidental physical activity helps but is no substitute for exercise. Sorry but shaking your leg when you watch TV doesn’t replace a cardio workout. But if you park farther away or take the stairs instead of the elevator you will burn more calories and every calorie burned is not one around your waist making your jeans tighter.
An apple a day keeps the doctor away it’s true, especially if you have good aim of course. And as we approach a fave week of celebration for me (National Laughter Week, July 12-18th and, unfairly, a serious back-seater in the holiday line-up rankings), I’ve been called upon to shed a little light on the subject.
Why should you care about National Laughter Week, and why is this important to you??
Well, Mr. & Mrs. Grumpy Shorts, it’ll make you a better person! Healthier, Leaner, Wealthier, Greener. Soooo, Sunshine, keep your peepers right here and I can give you the facts, Jack.
Healthier
Fact: Laughter Boosts the Immune System. It decreases stress hormones while increasing immune-cell function and infection-butt-kicking antibodies, thus improving your army of disease resistance.
Fact: Laughter Protects the Heart. It improves blood vessel function (so your streets are clear, you know what I’m sayin’??) and increase blood flow, which can help prevent the ole’ ticker from coming to a screeching halt, as well as other cardiovascular problems I don’t much want to deal with.
Fact: Laughter Relaxes the Whole Body. A good, hearty laugh relieves tension and stress, leaving your muscles relaxed for up to 45 minutes after. Much like you-know-what…. I was referring to stretching. Geez, please get your mind out of the gutter. I’m blushing and feel a wee violated with your filthy ideas.
Leaner
Fact: Laughter Triggers the Release of Endorphins. Dr. Feelgood Chemicals from the brain, not from the sinister looking guy on the street corner. Endorphins promote an overall sense of well-being and even temporarily relieve pain. They fight depression, and depression often leads to emotional and over-eating. Making you… well, not usually skinny… Plus a serious laugh also burns calories. Much like…. Stretching! Again! You! With the dirty mind!
Wealthier
Fact: Laughter Attracts Others to You. And if you’re in business, you’re looking to attract. Marketing 101: People do business with those they know, like, and trust. Some MBA Course Info: Humans are also naturally drawn to those that emanate Health (including being Lean and Fit) and Longevity. It’s the primal instinct in us to seek the Alphas. We’re also social creatures, and our brains are hard-wired to make connections with one another. Laughter really is contagious – just hearing laughter primes the brain and readies you to smile and begin to laugh yourself.
Greener
Fact: There’s enough bad ju-ju in this world. Please stop mucking up the mojo anymore with your frown. Plus you’re getting wrinkles and balding pre-maturely for it. (Yes, even you ladies.) Stress and temperament pollute your body the same way gunk n junk are polluting our streams and oceans. It is all deeply connected, and I urge you to put a lot more laughter and happiness onto the planet for the time you’re here.
Sounds good, right?!?! What I need you to do now is celebrate with me, for reals! Smile, laugh, notice the humor and good feelings in the everyday situations, tell a friend… I’ve based my entire life and career on laughter, and look how fantastic and fit I am. I just did a cartwheel. I know you couldn’t see it, duh, but I did one for you anyways. Now go find the person who makes you laugh the most and give them a big high-five from me. Pass on the love, and remember to Laugh More.
XOXO Sonja

Here’s another of Roni Noone‘s awesome recipes. Her spicy tomato soup with pinto beans recipe from her GreenLiteBites book and blog is delicious. She calls this soup spiced but we called it spicy because our spices are a little hotter than hers. Feel free to spice this recipe to your taste. Grab some condensed tomato soup – low sodium, some water, some of your favorite spices like chili powder, cilantro, cumin. Throw in some real tomatoes and your favorite beans – we go for pinto beans here. Turn that pot on and cook up some dinner.
