In today’s Wellness Minute Dr Fitness and the Fat Guy share a favorite salmon asparagus recipe. Take four salmon fillets each about 4-6 ozs. Get rid of the skin and all that brown stuff. Does anyone like that brown stuff?  Add asparagus, dry white wine, vegetable broth, spices and throw the whole thing in the oven for about 12-1 minutes. Egan, Lisa compressedLisa Egan started her career as a licensed psychotherapist.  She worked with a number of women in the middle of life transitions, and realized quickly that there were a lot of women with good ideas, but little experience in implementing them.  Being an entrepreneur, and wanting to help these women, Lisa started WiseWomen Radio.   As an outgrowth of this initiative, Lisa began to work in the financial services industry, eventually started her own firm. Each year we have about 400,000 ACL injuries. Knee surgery is no fun and if you have to have it done you want it done right and not have to to do it again. Sadly though a lot of ACL repairs fail and require more surgery. The big tip on how to prevent this is to choose a surgeon who does a lot of these procedures. Karen Robinson Cope, Serial Entrepreneur and Philanthropist

Karen A RobinsonKaren Robinson Cope is the managing partner of Atlanta Technology Advisors, a firm dedicated to growing early stage companies. Prior to ATA, Karen was the President and CEO of Prime Point Media, one of the largest alternative out of home advertising companies in the United States. Ms. Robinson joined Prime Point Media in 2001 when the company was still in the planning stages and was instrumental in the successful commercialization of the business and sale of the business. Prime Point Media was acquired by Outdoor Partner Media, a publicly traded company located in Toronto, in August 2006. 

Before joining Prime Point, Karen was chairwoman, President and CEO of Enrev Corporation, a battery management technology company that was sold in 2001. At Enrev, she led the company’s development of a licensing model for its proprietary products, established a notable roster of private stockholders, and raised more than $42 million in private equity. Prior to Enrev, she was president and CEO of Electronic Power Technology, Inc and President and CEO of Advanced Charger Technology which was sold in 1998. From 1991 until 1993, she served as vice president of sales and marketing for Amnex, a telecommunications company. At Amnex, she doubled sales in less than two years and under her leadership, the company was ranked second in its category in INC. Magazine’s fastest growing publicly held companies. Prior to that, Karen served as vice president of sales and marketing for National Data Corporation, a $900 million publicly traded company. She has also held leadership positions at AT&T and the May Company where, at 23, she was the youngest divisional sales manager in the company’s history.

Karen holds a BA in economics and political science from the University of Redlands. She is a member of the Board of Counselors of the Carter Center, as well as a board member of a number of companies and non-profits. She is the past president of the Technology Executive Round Table, and a protégé in the Committee of 200, the premier Women’s National Professional Organization. In 2000 she was honored as the Georgia Technology Woman of the Year and Wireless Weekly named her one of the top 20 Women in the wireless industry. She is a frequent speaker at both the regional and national level where she has spoken at MIT, Georgia Tech, Harvard and Emory Universities. She is also a frequent judge, most recently at the Ernest and Young Entrepreneur of the Year.

Ms Robinson is married to Richard Cope, also a serial entrepreneur who is the CEO of Nanolumens, the leader in flexible displays. They are parents to Alexandra Mara and live in Duluth, Ga. They are actively involved in Perimeter Church and supporting micro lending in both Africa and Central America.

On today’s show Dr Fitness and the Fat Guy had on Catherine Cassidy, Editor-in-Chief of the Taste of Home media group. We opened the segment talking about how the Gulf oil tragedy is going to impact fish consumption and probably make fish and shrimp more expensive. She also talked about the trend to eat fresh and eat local at farmer’s markets. Catherine shared some tips on how to cut calories from your favorite comfort food recipes. She said an easy way to cut calories is to boost up the vegetables in your meal while cutting back on the meat. She also said that you can mix and match some low calorie milk or cheese in a recipe and not really notice. But most importantly you have to learn what a portion size really is – and it’s much smaller than you think it is.  She also explained that Taste of Home magazine and cookbooks feature reader submitted recipes that have been throughly tested in the Taste of Home kitchen. She also said that the recipes are so easy a husband can do it. Catherine also gave some great tips on how feed a large group – she said that assembly line serving works best -with foods like fajitas or tacos. Valerie shared details about the new Vampire Diet that she wrote about in the Huffington post – that is sweeping Hollywood. It seems those fad diet loving Hollywood folks are now eating something red at every meal. It seems like a subtle Twilight promotion, but this diet is very limiting – name some red foods: tomato, red pepper, red meat, cherries – see the list is pretty short. A better weight loss tip is to take small steps each day rather than looking for a miracle diet. They have to be pitted and drained. Then mix together some grape tomatoes, mozzarella cheese garlic and basil. then mix everything together with olive oil, balsamic vinegar and roasted red peppers.
